Grandpa Norm's Cucumber Salad

Quick and easy cucumber side dish.

This recipe is from my Grandpa Norm & Grandma Ruth Hagler. It's my absolute favorite cucumber salad recipe.  You can scale it up or down depending on how many cucumbers you have on hand.

INGREDIENTS:
  • 6 cucumbers, sliced 1/8" thick (peel regular cucumbers, you can leave skin on English cucumbers)
  • 2 medium onions, sliced 1/8 thick
  • 2 T. Pickling Salt
  • 1/2 C. White Distilled Vinegar
  • 1/4 C. Vegetable Oil
  • 3/8 C. Sugar
DIRECTIONS:
  1. Combine cucumbers, onions and pickling salt in a glass container and soak for 3-4 hours (or overnight) in the refrigerator.
  2. Rinse cucumbers and onions really well and squeeze gently to remove any excess water.
  3. Combine vinegar, oil and sugar in a glass measuring cup. Whisk together with a fork until sugar is dissolved.
  4. Pour dressing over cucumbers and onions, combine and chill until ready to serve.
